Great question. I would collect about a kilo of leeches, toss the little bastards in a blender and then coat the whole thing in an organic solvent like Phenol or chloroform. After a satisfying listen to their screams, I'd turn the blender on high for about an hour (don't forget the cover, and only do this in a fume hood).

If you homogenize the tissue and then centrifuge it you should be able to have the oil float above the solids and aqueous material.
